Austrian Strudels with Rene Felbermayr

Austrian Master Baker Rene Felbermayr is teaming with the Artisan Baking Center to teach the art of the strudel, a wafer thin dough that can be light as air. The fillings will range from the classic applestrudel to a savory cabbage & beef strudel. Beginning with the basic formula, Rene will walk through different doughs, the manner of handling and preparation, along with ways to reduce sugar.

Born and raised in Austria and Hofkirchen, Rene started baking when he was 13 years old. He has worked as a professional baker since 2005 — after three years of his apprenticeship for bread baking, he completed two more years of apprenticeship to become a confectioner. In 2014, he was offered a role in Los Angeles and made the move from Austria to the United States. He specializes in Traditional Austrian bread products, desserts, and sweets!
