European Shaping Techniques

Austrian Master Baker Rene Felbermayr will introduce shaping techniques common in many classic traditional European breads but not often used in this country. Where shaping is concerned, practice makes perfect. This class will give you an opportunity for lots of hands on dough! Spend four hours with a master learning these new skills.

3 String Braid
4 String Braid
Rolling Techniques: Saltsticks, Kipfer
Born and raised in Austria and Hofkirchen, Rene started baking when he was 13 years old. He has worked as a professional baker since 2015 — after three years of his apprenticeship for bread baking, he completed two more years of apprenticeship to become a confectioner. In 2014, he was offered a role in Los Angeles and made the move from Austria to the United States. He specializes in Traditional Austrian bread products, desserts, and sweets!
