Indian Flatbreads

Roti and Paratha – India’s favorite flatbreads 
 
An everyday staple for more than a billion people, the essential, all-purpose roti is India’s favorite flatbread and a perfect introduction to the country’s famously rich and diverse bread-baking culture. Requiring no oven, no yeast, and no mixers, rotis are simple, round flatbreads made from a whole wheat dough, and cooked on a dry, hot griddle. However without the right technique and ingredients, the humble roti, like a good baguette, can be unforgiving and tricky to master. In this hands-on class, you will learn how to make perfectly round sprouted wheat rotis as well as its rich, chewy, flaky variation – the paratha – that can either be enriched with ghee and layered like a croissant or stuffed with delicious fillings such as spicy potatoes, meats, cheese or vegetables. You will also learn how to make spiced wheat-free flatbreads using nutritious, whole grain flours like purple barley as well as a dessert flatbread stuffed with sweetened lentils.  No forks or knives needed – Indian flatbreads are a hands-only operation!

 

 

PANKAJ KUMAR is a bread baker and cook from India, living in Oakland, California. He grew up in a family of Ayurvedic healers, in a culture that believed that food is sacred, a blessing and a gift, and that the simple acts of cutting, chopping and stirring are graces that can bring one peace and calm. Pankaj has pursued his passion for baking, cooking and serving good food in the kitchens of Cheese Board Pizza and Three Stone Hearth in Berkeley and at Arizmendi Bakery in San Francisco. I understand that my participation in this event/class is voluntary. I recognize and understand that culinary classes have inherent risks and hazards and that my participation is solely at my own risk, and that I assume full responsibility for any resulting injuries, illnesses, and damages.

I also give my consent for full and unrestricted use of my image and/or voice, for use by ABC for promotional purposes and in all media. All such representations of every kind shall remain the property of ABC. I acknowledge that I have carefully read this release and hold harmless agreement.

Registering for an ABC class will automatically opt you into our email list to receive class schedules and special events at our Baking School. You can opt out at any time by clicking the "unsubscribe" link at the bottom of any email.

Please note that 5% of the class tuition is non-refundable in the event you need to cancel.

If you cancel with at least 3 days' notice, you will receive either a full cash refund less 5% or credit towards a future class. If you cancel with less than 3 days' notice, you will receive credit for a future class. We're sorry, no refund for classes cancelled with less than 24 hours' notice.
