Italian Pastry for the Home Baker

Pastry Chef Palmiro Russo is traveling from Italy to teach a class for home baking enthusiasts that focuses on Italian Crostate, also know as Italian Tarts.
The class will teach how to make two of Italy’s most popular desserts; the beautiful glazed Fresh Fruit Tart called the Crostata di Frutta and the Almond Chocolate Tart called the Crostata al Cioccolato e Mandorle.

 

Home bakers will learn the secrets for perfecting the Crostata di Frutta- including how to prepare and handle shortbread, how to make an irresistible Italian custard (a delicious filling applicable to numerous other desserts), the correct method for slicing fresh fruit for decoration and how to top the Crostata with a shiny gelatin glaze.

In the second part of the course, students will learn how to make a delicious Chocolate Almond Crostata. Using the same shortbread crust, Chef Russo will then teach how to make chocolate frangipane, a chocolate almond based filling that is truly delicious.

Each participant will be working on their own crostata. The final products will go home with the participants.

PALMIRO RUSSO is an Italian pastry chef from Napoli. Palmiro holds the honor of being a part of the Equipe Eccelenza of the Italian Federation of Pastry, Ice Cream and Chocolate, and is considered an expert of the Neapolitan Pasticceria as well as the Italian classics. His range of expertise covers everything from small pastries, cakes and cookies, to chocolate confectionary products, nougat and pulled sugar. Throughout his successful career, Chef Russo has participated in many national and International competitions, receiving numerous awards and prizes. Palmiro is still very active in the field as a pastry chef, teacher and consultant. Just recently, some of Palmiro’s recipes are being reproduced in California by his son Antonio, owner of the baking company True Delicious.

Please note that 5% of the class tuition is non-refundable in the event you need to cancel.

If you cancel with at least 3 days' notice, you will receive either a full cash refund less 5% or credit towards a future class. If you cancel with less than 3 days' notice, you will receive credit for a future class. We're sorry, no refund for classes cancelled with less than 24 hours' notice.
