La Sfogliatella with Palmiro Russo
March 6, 2020 @ 8:00 am - 4:00 pm
Award winning Italian Pastry Chef, Palmiro Russo, will be hosting an Authentic Neapolitan dessert class where he will demonstrate how to make four of the most famous desserts from Naples and the Amalfi Coast. The heart of these desserts stem from the dough of a quintessential pasticceria Napoletana known as, “Sfogliatella Riccia” (pronounced Sfo-ya-tell-a). In Italian culinary slang, the Sfogliatella is considered the “Queen of Naples.” It is rare to find authentic Sfogliatelle outside of the Naples region and for this reason the class places emphasis on how to correctly make this unique and original recipe.
Sfogliatella is a mouthwatering flaky leaf-layered dough that is filled with a wonderful mixture of ricotta, semolina, sugar and citrus. Many restaurants outside of Italy have added Sfogliatelle to their dessert menu because of its incredible flavor, popularity and history.
The four desserts you will master are:
La Sfogliatella Riccia:Shell-shaped pastry filled with ricotta, semolina and orange peel purée
Code d’Aragosta:Lobster tail shaped pastry filled with choux, baked and then filled with a light custard
Santa Rosa:Similar to the Sfogliatella, but finished with custard and Amarena (Sour cherry)
Savory Sfogliatella:with savory fillings to create your own unique dessert
