Pizza & Its Cousins

Pizza dough is not just for pizza. In Southern Italy it is used to create a whole host of dishes…in Naples there is Pizza Fritta, in Puglia they make Panzerotti (mini fried calzone), in Calabria there are stuffed Pittas, Pizza Rolls with greens & ricotta and Pizza Rosettes that bake like sticky buns. We will also go to Sicily where they have their own dish called “sfincione”, a focaccia-like pizza topped with tomato sauce, onion, anchovy, caciocavallo and breadcrumbs. Pizza has so many cousins! We will also make beautiful Neopolitan pizza to compare alongside.
Join Rosetta, our Southern Italian expert, as we explore all of these many uses for pizza dough. You will make the dough, assemble and bake the dishes, and enjoy them all afterwards.

 

 

 

Cookbook author and teacher Rosetta Costantino was born and raised in Verbicaro, a small wine-producing hill town in Calabria, at the southern tip of the Italian peninsula. The family moved to the Bay Area when Rosetta was 14 years old, and though they settled into the fast pace of life there, they kept their traditions. They continued to grow their own produce, raise rabbits, make their own ricotta, and cure their own salsiccia Calabrese with spicy peperoncino from their garden. Even after she earned a chemical-engineering degree at the University of California Berkeley and went on to a successful career in Silicon Valley, Rosetta retained her love of her family’s traditional foodways.

Rosetta shares her story, family traditions, and over 150 recipes in MY CALABRIA: Rustic Family Cooking from Italy’s Undiscovered South (November 2010). Written with San Francisco Chronicle food columnist and author Janet Fletcher ,and nominated for an IACP cookbook award, MY CALABRIAtransports readers to this unique food culture of rustic, homegrown, and homemade foods. Rosetta’s second book focusing on the desserts of Southern Italy was published by Ten Speed Press on October 2013 and has also been nominated for an IACP cookbook award.

I understand that my participation in this event/class is voluntary. I recognize and understand that culinary classes have inherent risks and hazards and that my participation is solely at my own risk, and that I assume full responsibility for any resulting injuries, illnesses, and damages.

I also give my consent for full and unrestricted use of my image and/or voice, for use by ABC for promotional purposes and in all media. All such representations of every kind shall remain the property of ABC. I acknowledge that I have carefully read this release and hold harmless agreement.

Registering for an ABC class will automatically opt you into our email list to receive class schedules and special events at our Baking School. You can opt out at any time by clicking the "unsubscribe" link at the bottom of any email.

Please note that 5% of the class tuition is non-refundable in the event you need to cancel.

If you cancel with at least 3 days' notice, you will receive either a full cash refund less 5% or credit towards a future class. If you cancel with less than 3 days' notice, you will receive credit for a future class. We're sorry, no refund for classes cancelled with less than 24 hours' notice.
