Advanced Viennoiserie for Professional Bakers

This two day, hands-on and demo class for working professional bakers will provide an in depth study along with practical knowledge for production of laminated dough, focusing on the croissant. Participants will learn to manipulate and understand all factors of production.


International competitor and bakery owner, Jeremey Gadouas, will help you branch out beyond white flour to create new taste profiles using three different flours. Learn the tricks to using rye, whole wheat and durum in classic croissant formulas. An exploration into flavor balance, lamination techniques, preferments and fermentation will allow you to craft your perfect croissant. We will work with modern and innovative fillings and finishes to set your product apart. Instruction will also include easy ways to produce both savory and sweet products from the same dough.



Jeremey Gadouas has an AA in culinary arts and a certificate in baking science and technology from the American Institute of Baking. Over the last 20 years, he has worked in a variety of bakeries, ranging from small retail businesses to industrial wholesale bakeries. He is the owner of Midori Bakery in Redmond, WA, and a Senior Manager of R & D and Commercialization for ARYZTA. As a member of Bread Bakers Guild Team USA, he won a silver medal at the 2012 Coupe du Monde de la Boulangerie, competing in the Viennoiserie category.

I understand that my participation in this event/class is voluntary. I recognize and understand that culinary classes have inherent risks and hazards and that my participation is solely at my own risk, and that I assume full responsibility for any resulting injuries, illnesses, and damages.

I also give my consent for full and unrestricted use of my image and/or voice, for use by ABC for promotional purposes and in all media. All such representations of every kind shall remain the property of ABC. I acknowledge that I have carefully read this release and hold harmless agreement.

Registering for an ABC class will automatically opt you into our email list to receive class schedules and special events at our Baking School. You can opt out at any time by clicking the "unsubscribe" link at the bottom of any email.

Please note that 5% of the class tuition is non-refundable in the event you need to cancel.

If you cancel with at least 3 days' notice, you will receive either a full cash refund less 5% or credit towards a future class. If you cancel with less than 3 days' notice, you will receive credit for a future class. We're sorry, no refund for classes cancelled with less than 24 hours' notice.
