The Bûche de Noël or Yule Log makes any holiday table festive, a dessert that is just as delicious as it is beautiful. Learn from the master himself, French chef and Meilleurs Ouvrier de France Jean Yves Duperret, who will pass on generations of knowledge about this dessert, a holiday tradition in France since the 19th century.
This hands-on three hour class will cover the entire process, from making the sponge cake, meringue, mousse sabayon to the assembly. We will cover a few different decor options including chocolate curls, ivy leaves and more. You will be armed with the confidence and know-how to replicate this dish on your own. Chef Jean-Yves Duperret is a French pastry chef based in San Francisco, CA. More than 40 years of experience enabled him to master the fine art of pastry making. He has baked for important personnels such as presidents, mayors, and special celebrities. He is also famous for his best selling book “La Nouvelle Patisserie: The Art and Science of Making Beautiful Pastries and Desserts“, named for the pastry shop he opened in San Francisco in 1984. He has toured 12 cities with William Sonoma, and he is recognized as one of the best ambassadors of French Pastry in the Bay Area. He expresses his creativity and expertise through masterpiece cakes commissioned by companies, private individuals as well as celebrities. As an experienced owner and former chef of five pastry shops, he offers consulting services to help bakeries and pastry shops owners to improve business efficiency and bottom line. When he’s not making a demonstration in the Silicon Valley, you can find Chef Jean-Yves in his kitchen teaching the art of French pastry to patisserie lovers.
