Spelt, also known as Farro Grande, is an incredibly flavorful grain that originates in the area between the Black Sea and the Caspian Sea. Spelt has similar baking characteristics to wheat but can be easier to digest than common wheat thanks to its higher water solubility. Our Organic Spelt is grown in Alberta, Canada and is milled a slow and cool process that retains the rich flavor of the grain.
Our Type 85 Spelt is designed for artisan bread and replicates older milling techniques. The higher ash value increases the nutritional value of the flour without compromising its baking performance. This flour is not quite white flour and not quite whole grain. This flour is a great replacement for All Purpose Flour and works well in all bread formulas and is incredible in pie dough, tart shells, and cookies.

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
