This malted blend of hard red winter wheat has been designed for artisan bread. In fact, this is our #1 selling product and it is used by hundreds of artisan bakeries around the country. The addition of malt increases enzymatic activity during fermentation which yields bread with greater volume without diminishing the integrity of the open crumb and increases the depth of color in your crust. It is perfect for baguettes and sourdough breads of any shape and size. This flour also works very well in laminated doughs and quick doughs.

Storage Recommendations

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
