This blend of hard wheats has been designed by Tony Gemignani to be the one of the most versatile pizza blends on the market. Tony focused on the flavor first. Then we optimized the blend to work in the demanding environment of a pizza house. The flour was used in all of Tony’s locations for six months where it ran the gauntlet and came out victorious earning Tony’s coveted stamp of approval. This flour works well for most styles of pizza, focaccia, bread sticks, and baguettes.

Storage Recommendations

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
