Description
We are excited to introduce you to Great Northern Plus, our latest unbleached organic bread flour designed for artisan bakers. In terms of protein, this flour sits between Artisan Bakers Craft Plus and High Mountain with 12.6% protein and a similar ash content (just north of 0.60%). If you need a bit more strength than ABC+ or a bit more extensibility than High Mountain, and are looking for a malted flour (this one is malted with organic malted barley) this is the bread flour for you! Currently, the main wheat component is Yecora Rojo – a hard red spring wheat that we grow on a winter cycle. We are blending in a variety of wheat from Southern Utah called Juniper to help control the protein and extensibility.

Storage Recommendations
We recommend that you store this high protein bread flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
