Pizza Quest Workshop with Peter Reinhart

Peter Reinhart returns to the Artisan Baking Center for a hands-on pizza making class based on his latest book, Pizza Quest: My Never-Ending Search for the Perfect Pizza. In this 5-hour workshop you will make three pizza doughs to take home: Peter’s High Hydration Pan Pizza Dough; Naturally Leavened Sourdough; and Classic White Dough. During the class, you will make Peter’s all purpose pizza sauce, his “Secret Sauce” pepper mash, and a variety of “tribute pizzas” from all the categories covered in the new book, including Detroit-Style, New York-Style, Sourdough Focaccia and Sicilian, and hearth-baked Neapolitan pizzas. We’ll also celebrate by sharing the ultimate pizza party luncheon.

All course attendees and guests of the Artisan Baking Center and Keith Giusto Bakery Supply are subject to the current COVID-19 Health Orders and Guidance as set forth by the County of Sonoma in regards to face covering requirements or proof of vaccination. Course instructors may also wish to request certain health and safety standards for their courses. Attendees will receive such requirements and current standards in a pre-class email 48 hours prior to the class date.

Instructor Bio

PETER REINHART is a baking instructor at Johnson & Wales University. He was the co-founder of the legendary Brother Juniper’s Bakery in Santa Rosa, California, and is the author of twelve books on bread baking, including Brother Juniper’s Bread Book and the modern classic The Bread Baker’s Apprentice, which was named cookbook of the year in 2002 by both the James Beard Foundation and the International Association of Culinary Professionals. He lives with his wife, Susan, in Charlotte, North Carolina.

I understand that my participation in this event/class is voluntary. I recognize and understand that culinary classes have inherent risks and hazards and that my participation is solely at my own risk, and that I assume full responsibility for any resulting injuries, illnesses, and damages.

I also give my consent for full and unrestricted use of my image and/or voice, for use by ABC for promotional purposes and in all media. All such representations of every kind shall remain the property of ABC. I acknowledge that I have carefully read this release and hold harmless agreement.

Registering for an ABC class will automatically opt you into our email list to receive class schedules and special events at our Baking School. You can opt out at any time by clicking the "unsubscribe" link at the bottom of any email.

Please notify us if you are unable to attend your class. While registration is non-refundable, if it is more than four (4) days prior to the date of your scheduled class, registration may be transferred to another class of equal value, subject to availability. Our classes require the purchasing of ingredients and coordination of staffing ahead of time, which is based on class attendance.
