We chose specific varieties of Hard Red Winter Wheat to make our Organic Type 00 Normal. We were looking for a gluten structure that is both soft and strong and that can hold its own during a long cool fermentation. This flour will give your pizza a nice thin crust with a supple crumb that melts in your mouth. This flour is ideal for Neo-Neapolitan style pizza and artisan flatbreads.

Storage Recommendations

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
