This blend of soft white and soft red wheat is perfect for plugging in a bit more nutritional value to your pastry products with out affecting volume. It also lends a nice rustic feel to the finished product. This flour is perfect for all pastry and some cake applications. It can also be used to blend down the protein of our stronger flours which dramatically helps extensibility without adding dough conditioners.

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
