Organic Whole Wheat Hi-Pro Medium
100% whole dark northern spring wheat; medium grind
We mill this whole wheat on short flow roller mill where the bran and germ is not separated during the milling process. Short flow roller mills are more gentle on the wheat kernel and the milling process generates much less heat. The medium granulation of this flour will give you a more rustic feel and look to your crumb. This flour is ok for 100% whole wheat breads – both artisan and pan (sliced), but really excels as a percentage to your total flour weight.

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
