Description

This “old-world” bread flour is a blend of Hard Red Wheat and has been designed specifically by artisan bread bakers. This organic bread flour is perfect for sourdough, rustic European, and American-style breads of any shape and size. It also works very well in bread machines and for making laminated doughs (like croissants), quick breads (like banana bread), brownies, and is spectacular for making cookies with a chewy texture. Also referred to as “high-extraction” flour, it is milled 100% whole and sifted to remove some of the brand and germ. The commercial name “Type 80” refers to the amount of Ash (that bran and germ we mentioned) left in the flour. Higher Ash content increases the flavor and nutritional value of the flour without compromising its baking performance.

Storage Recommendations

We recommend that you store this organic flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
