Blitz Puff Pastry with Nicole Plue

Blitz puff pastry is the fast(ish), nearly flawless way to create tender, flaky, buttery layers for a variety of baking projects, both sweet and savory. A hands-on workshop where you will roll and fold your way along, learning best practices for handling rich doughs and adding a multitude of new treats to your repertoire. Projects include: Strawberry Mascarpone Tart, Tomato Fontina Tart, Tart Flambe, Potato Cheddar Knishes, Apple Turnovers, Anchovy Straws, and more.
Instructor Bios
A recipient of the James Beard Award for Outstanding Pastry Chef, Nicole Plue has worked extensively in restaurants in both the Bay Area and New York City. For over eight years, she has been teaching aspiring pastry chefs and avid bakers, including sold-out Kouign Amann courses at the Artisan Baking Center.
