Description

We mill this whole rye flour on short flow roller mill where the bran and germ is not separated during the milling process. Short flow roller mills are more gentle on the rye kernel and the milling process generates much less heat. The fine granulation of this flour will give you a super smooth dough. This is a superb option for recipes that call for dark rye flour or as an addition to 100% whole grain breads – both artisan and pan (sliced). It’s also a fantastic flour for sourdough starter due to the higher nutrient content found in rye flour (and whole-grain flours, in general).

Storage Recommendations

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
