Organic Khorasan is a fantastic grain. This ancient grain will give your dough a warm yellow color similar to durum, but with a rich flavor that is a bit deeper and more sweet. Khorasan flour also develops gluten better than durum even though their protein is typically similar. These berries are very hard and require more time if sprouting and you should feed them into your mill slowly for the best results.

We recommend that you store this grain in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
