This flour is milled on a roller mill and hammer mill. We use two milling methods to achieve a unique granulation and match a specific color and flavor profile. The combination of roller and hammer milling is not too common – thus the name: Special. This product is great for dense grainy breads, bread sticks, or any product that requires 100% whole grain on the sweeter side of the flavor spectrum.

We recommend that you store this flour in a cool and dry place. 65°F and 60% humidity is ideal. The flour will keep for 6 months to a year under these storage conditions. We also recommend that you store the flour in a sealed food-safe plastic container. Something like this will do fine.
